Ingredients
1 1/2 C all purpose flour
2/3 C Sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3/4 C old-fashioned rolled oats
1 C banana (smashed, ripe, approx 2 large)
1/3 C yogurt
1/4 C vegetable oil
1 tsp vanilla
2 eggs (large, slightly beaten)
non-stick cooking spray
Instructions

1.  Preheat oven to 350 degrees.

2.  Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and the next 4 ingredients (through salt) in a large bowl, stirring well with a whisk. Stir in oats.

3.  Combine mashed banana, yogurt, vegetable oil, vanilla extract, and eggs; add to flour mixture. Stir just until moist.

4.  Spoon batter into an 8x4 inch loaf pan coated with cooking spray. Bake at 350 degrees for 55 minutes or until a wooden pick inserted in the center comes out clean. Cool 15 minutes in the pan on a wire rack; remove from pan.

5. Cool completely on wire rack.
