Greens And Beans Ingredients:
- 1lb Northern Beans
- 12 oz diced ham
- 2 cloves garlic
- 1 yellow onion
- 3 carrots
- 4 ribs celery
- 2 lbs potatoes
- collard greens
- small can tomato sauce
- 6 cups low sodium chicken broth
- salt free seasoning
- canola oil
Directions:
Night before:
- Soak beans in covered bowl with cool water (2-3 inches over beans), place in fridge overnight
Next day:
- Dice and pan fry ham until browned slightly.
- Dice onions, mince garlic.
- Peel and slice carrots , slice celery.
- In a large stock pot, heat 2 tablespoons canola oil.
- Saute onions, carrots, celery, garlic in 2 T hot oil until tender.
- Peel and cut potatoes into 1/2 inch cubes.
- Chop collard greens, remove stems.
- Drain and rinse beans.
- Add potatoes, beans, greens, and broth to the pot.
- Cover and bring to a boil.
- Boil gently for about an hour, until potatoes and beans are soft.
- Use immersion blender and puree half (or all) soup to your preferred consistency.
- Add tomato sauce, ham, and season to taste
Cat's Corny Cornbread
Ingredients:
- 1 cup butter, melted
- 1 can creamed corn
- 1 can whole kernel corn
- 1 box Jiffy mix
- 1/2 c sugar
Directions
Preheat oven to 350 degrees Grease 8x8 pan Mix melted butter and both corns, stir in Jiffy mix and sugar Bake 40-45 minutes until top is golden brown
Tutti Frutti Tarts
Ingredients:
- One can mandarin orange slices (Reserve liquid)
- Chopped fresh pineapple
- Maraschino cherries
- 8 oz cream cheese, softened 1
- /4-1/2 c powdered sugar
- 1 teaspoon vanilla
- Graham cracker crusts
Directions:
- Drain oranges, reserve 2 Tablespoons juice.
- Whip cream cheese, powdered sugar, vanilla, and 2 T juice.
- Fill crusts, top with orange slices, pineapple slices, maraschino cherries.
- Chill before serving, at least 30 minutes
