Ingredients
1 large egg
1/2 C granulated sugar
2/3 C old-fashioned rolled oats
3 1/2 Tbsp unsweetened coconut flakes (crushed)
2 Tbsp dried cranberries (chopped)
2 tsp butter, melted
1/4 tsp salt
1/4 tsp vanilla extract
1/4 tsp lemon zest
Instructions
- Preheat your oven to 325° F. Coat a baking sheet with cooking spray.
- Beat egg and sugar in a medium bowl until combined.
- Add oats, coconut, cranberries, butter, salt, vanilla and lemon zest.
- Using a wooden spoon, stir until thoroughly combined. Drop the dough by the teaspoonful onto the baking sheet, spacing 1 inch apart.
- Bake cookies until golden brown, about 10-15 minutes. Let cookies cool completely, about 5 minutes, and enjoy!
