Ingredients
2 Tbsp butter
1 C white onion (diced)
2 garlic cloves (crushed)
1/4 tsp ground achiote (or turmeric)
salt to taste
2 1/2 C cooked or canned hominy (mote)
1 C fat-free or skim milk
4 eggs (whisked)
2 Tbsp scallions (chopped)
1 Tbsp cilantro or parsley (finely chopped)
Instructions
- Heat butter in a large sauté pan over medium heat. Add onions, garlic, achiote, and salt. Cook for 5 minutes until soft.
- Stir in hominy and cook for 2 minutes.
- Add milk and cook until absorbed by hominy.
- Pour in whisked eggs, stirring constantly for 3-5 minutes until cooked.
- Mix in scallions and parsley (or cilantro). Adjust salt if needed.
- Serve with queso fresco and black coffee.
