1/2 medium yellow onion (peeled)
2 clv garlic (peeled)
8 oz can tomato sauce
1 C raspberry jam
1/4 C apple cider vinegar
1 chipotle pepper in adobo
8 chicken thighs (about 4 pounds)
Instructions

- Add the tomato sauce, raspberry jam, cider vinegar, chopped chipotle pepper with adobo sauce to the saucepan with the cooked onions and garlic. Stir well and bring to a simmer. Simmer for about 45 minutes and stir occasionally. Let the sauce cool and thicken.
- Prepare the chicken by removing the skin and trimming any excess fat. Preheat the oven to 375° F.
- Line a baking sheet with aluminum foil, spray with non-stick spray and arrange the chicken thighs on the pan. Pour some BBQ sauce into a small bowl and brush the chicken thighs with the sauce. Discard any BBQ left in the small bowl and wash the brush with hot soapy water.
- Place the BBQ chicken into the oven and bake for 45 minutes, recoating with fresh sauce at the 15 minute and 30 minute mark.
