Ingredients
2 C brown lentils (sorted and rinsed)
12 oz cooked andouille-style chicken sausage (or any chicken sausage, cut into 1-inch pieces)
3 C kale leaves (center ribs removed)
1 medium onion (peeled and diced small )
2 garlic cloves (peeled and minced)
6 C low-sodium chicken broth
2 sprigs fresh thyme
2 tsp kosher salt
1/2 tsp Freshly ground black pepper
Instructions
- Place all the ingredients in a 6-quart or larger slow cooker and stir to combine. Cover and cook on the LOW setting until the lentils are tender, about 6-8 hours.
