Ingredients
2 Tbsp corn oil (or vegetable oil)
1 white onion, diced
2 clv garlic (minced)
3 C frozen okra (thawed and sliced)
1 can diced tomatoes (low sodium preferred)
1/2 tsp salt
1/4 tsp pepper
Instructions
1. In a heavy-bottomed sauté pan warm oil over medium-high heat. Add onion and sauté about 2-3 minutes, until onion is translucent. Add garlic and sauté 1 minute more.
2. Add the okra and tomatoes with their juices.
3. Season with salt and pepper and simmer for 15 minutes.
4. Served warm. Enjoy!
