Tofu is a plant-based complete protein source, which means that it contains all the building blocks necessary for building and repairing muscle tissue. Tofu is also rich in calcium, which is important for maintaining bone health. Because it is much lower in saturated fat than other protein sources, swapping out tofu for red meat can help to decrease “bad” LDL cholesterol and increase “good” HDL cholesterol. Enjoy!
1. Place the oil in a pan over medium-high heat. Sauté the onion and pepper until softened- around 5 minutes. Add garlic and cook an additional minute.
2. Crumble the tofu into the pan and add the Roma tomatoes, tomato paste, lime juice, chili powder, smoked paprika, salt, cumin, and red pepper flakes. Cook until everything is heated through, stirring occasionally, for about 5 minutes.
3. Scoop out some of the tofu mixture onto the tortilla, then top with romaine and avocado. Fold both the top and bottom of the tortilla in, then roll it up from the sides so the filling is completely enclosed.
4. Heat a dry pan over medium-high heat and place the burrito seam side down in the pan. Toast until golden and flip to toast the other side. Enjoy!
